Afghan cuisine is mainly influenced by that of India, Persia (Iran), Uzbekistan, Turkey and Mongolia. From India came chilies, saffron, garam masala and pepper. Persia contributed coriander, mint and cooking with green herbs such as sabzi. Noodles such as aash come from Uzbekistan. Baklava has Turkish roots while Mongolian influences take shape in dumplings such as mantu and aashak. With all these fusions, Afghan cuisine still manages to have a style of its own!
